Food and Drink: Baileys and Chocolate Chip Bread Pudding

Bread Pudding has always been one of my favourite desserts -- it's a classic! And, as with all classics, sometimes it's fun to switch things up a bit. Starting with a simple bread pudding recipe like this one gives you lots of room to make flavourful additions. For this version I scoured my pantry, and bar cart, for some inspiration. Enjoy!

You'll Need:
  • 1 loaf of day old brioche, or any bread you'd like
  • 3 eggs
  • 3 cups milk
  • 1 tablespoon vanilla
  • 1 tablespoon Baileys
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 cup chocolate chips

Start by preheating your oven to 350 degrees. Next, cut the brioche into cubes and set aside.

Prepare the custard by whisking the eggs, milk, vanilla, Baileys, brown sugar, cinnamon and nutmeg. Pour the custard over the brioche, allowing it to soak into the bread. Spread the mixture into a buttered baking dish and top with the chocolate chips. Bake at 350 degrees for an hour. The bread pudding will be puffed and golden brown when ready.
